It would seem I’ve been bitten by the baking bug lately. I don’t know what it is… but it needs to stop because I am making delicious things, and running out of people to pawn my creations off on ( I luurrve cake but have a strict no-cake in the house for more than 1 day rule).
Last week, I woke up with this random idea that I wanted to create a cake with peanut butter frosting. The only problem was when I looked in my fridge, I didn’t have any of your typical frosting ingredients– and well, to be perfectly honest? I was too lazy to go to the store. So I decided to do a little experimenting and created a mousse type frosting that by far exceeded my expectations.
The result?
If you love chocolate and peanut butter, this cake is heaven. For real.
The chocolate cake is made from a boxed cake mix but this frosting will make it taste like it you made it from scratch- I promise.
I must warn it contains 1/2 cup of peanut butter, so it’s not exactly low-fat but the recipe is sans cream cheese or butter so that has to be some sort of plus, right?
My mother in law uses a powder peanut butter that has 85% fewer calories and fat, that I am considering trying out on this recipe. Not sure if it will mess with the consistency too much. So for now… below is your recipe to peanut-y-chocolate-heaven.
